Mmmhmmmm. I loooove these cashew date bars. They’re delicious yet so simple and easy to make. I can’t believe these are healthy. Seriously.
Sometimes I don’t even bother making them into bars and I just eat it out of the processor. Like, with a spoon. While crying. Because so good.
I am definitely going to use this recipe as a base for mini tarts someday, so look forward to that!
- 2/3 cup cashews
- 2/3 cup dates, pitted
- Pit the dates, Soak ingredients for half an hour. Blend together in a food processor until sticky. Spread on a baking tray lined with parchment paper and freeze for around half an hour to an hour until firm. Cut/shape into bars and enjoy!
