This Raw Kale Salad is delicious and one of the only ways I actually enjoy eating kale lol (apart from kale chips!) I hope you enjoy it too! This recipe is: dairy free, gluten free, raw, vegan, paleo, primal.
- 1 bag of kale
- 1 cucumber
- 1 red bell pepper
- 1 red onion
- a good guzzling of olive oil
- a splash of apple cider vinegar & manuka honey
- some malt vinegar
- a little lemon juice
- Wash and chop your kale. Do the same with the cucumber, red pepper, and red onion.
- Mix all ingredients in your salad bowl and massage the kale with your hands. Leave to marinate for a few mins. This makes on big salad, halve the ingredients if you want less.
