Today I will be showing you how to make my favourite way to eat quinoa! It’s delicious, nutritious, and so healthy! I also show you some of the benefits of quinoa, and this can also act as a tutorial on how to properly cook quinoa.
Did you know that Inca warriors regularly consumed quinoa for its energizing powers? It’s true; quinoa was known as the “gold of the Incas” and celebrated for rewarding those who regularly consumed it with stamina, energy, strength, and speedy muscle recovery.
This recipe is:
Omit feta to make Vegan & Dairy-Free
1 cup dry quinoa
1 cup chopped cucumber
2/3 cup halved cherry tomatoes
a drizzling of olive oil
a splash of unfiltered apple cider vinegar
Sea or Himalayan Salt, to taste
1 cup feta cheese
Cook quinoa as per the instructions in the video
(soak for 15 mins in water, toast lightly for a few mins, and then cook in 2 cups of water for 20 mins)
Once done, mix all the above ingredients together in a bowl, and you have your salad! Enjoy!
